Biggest Loser Pancakes (GF)

     Who doesn't love a pancake!!  I'm all about a fluffy, sweet, cinnamon  flap-jack.  Typically pancakes made with flour or bisquik are as such.  This recipe didn't even look good when I first read the ingredients...but I gave it a shot and loved them.  

    Now here's the kicker....I am new and committed to eating wheat and gluten free.  So I did a little a research on oats and whether or not they are gluten free.  Here's what I found....they are only gluten free (or "pure") if they are produced in a factory where the oats are  made on equipment for only gluten free products are made.  For example...Quaker Oats are not gluten free.  Now, there are companies who sell gluten free oats, like Bob's Red Mill, Trader Joe's, Holly's Oatmeal, GF Harvest.

    "Pure oatmeal does not contain gluten. However, most oatmeal brands on the market today are not pure — they contain oats that have been cross-contaminated with a tiny bit of wheat, barley and/or rye. Since those grains do have gluten in them, that cross-contamination makes most oatmeal brands unsafe on the gluten-free diet."  ~ www.celiacdisease.about.com

     Ok...now that I've clarified the oat issue.  Let's get to the recipe.

Biggest Loser Pancakes

6 egg whites
1 cup rolled oats, dry (Pure)
1 cup low fat cottage cheese
1 Tsp cinnamon (I usually add more)
1 Tsp vanilla  (check my blog on how to make your own. It's crazzaaay good)
1 Tbsp No sugar added applesauce

NOW...this recipe calls for 2 Tsp of sugar.  This is a BIG no-no for ME!  So... I added the no sugar added applesauce.  Yippeee skippeee!!

Add all ingredients to a blender, and blend until smooth!  This is where you do your dizzy dance while your beautiful batter is being pulverized. <<wink>>

Portion size is 1/4 cup.  The result is a fairly thin pancake..but, if you are staying away from breads and sugars...etc., what a treat this is!!!

This recipe makes about 10 pancakes and the best part...
Serving size is 3 pancakes at 181 calories!! WOOT!

Top with a few blueberries and a large strawberry, sliced thin.  If you want syrup...use 100% pure maple syrup.
